Another Successful Experiment

A kitchen experiment, that is. Couldn't decide what to make for tea tonight so improvised to use up ingredients.

Recipe: Spaghetti and Meatballs

Serves 2


14 Swedish frozen meatballs (mine were from Ikea!)
1 onion, chopped
6 baby button mushrooms, halved
400g tin chopped tomatoes
2 tsp red / grilled vegetable pesto (I accidentally bought grilled veg pesto thinking it was red... very nice, though)
Garlic puree
1x beef stock cube
Red wine
Worcester sauce
Mixed herbs, black pepper and chilli flakes

Spaghetti for two
Parmesan shavings

Oil and butter for frying


In a small saucepan, melt a knob of butter and saute the meatballs until cooked through and nicely browned.

Meanwhile, heat about 1tbsp oil in another, larger pan, and fry off the onions and mushrooms and add a good squidge of garlic puree.

When the onions have softened, add the tinned tomatoes, a glug of red wine, a splash of Worcester sauce, the pesto, the stock cube, herbs and a few ground chilli flakes (or chilli powder, not too much). Mix well, then add the cooked meatballs and stir to cover.

Simmer for approximately 20 minutes on a low heat.

Cook the spaghetti as per pack instructions. Drain and serve with the meatball sauce on top. Add parmesan shavings.

Basically it's a bolognese sauce recipe, but this is the first time I've tried it for meatballs. Also I don't normally add wine to bolognese, though I may change that now. :D These days I prefer to make bolognese sauce with real tomatoes instead of tinned because the flavour is stronger, but in this case there was most of a tin left in the fridge that needed using up...

In other news, I just left a Facebook status to the effect of: I've been playing Sims 3 for about two days and I'm already shipping Gwen and Holden, the two characters in my tutorial game. (They're housemates / good friends.) I am officially BEYOND HELP.
