Recipe following dinner...

Using an old Somerfield magazine recipe, somewhat adapted...

Lamb Koftas


400g lean lamb mince
About 30g breadcrumbs (one slice thrown in the mixer should do it) mixed with 1tbsp water
2x crushed garlic cloves
2tsp ground cumin
1tbsp fresh chopped mint (or about 1/2 tbsp dried)
1 tsp Magic Greek Herbs (bought in Crete several years ago as "spices for lamb" but I think it was a mix of basil, oregano, mint and dried chilli - use whatever you like!)

For tzatziki you need:

Some Greek yogurt
Some cucumber
Some other Magic Greek Herbs ("herbs for salad" this time - can't remember what they are though! You can also just use mint and garlic)

Mix the three together in a bowl and leave in the fridge to let the flavours develop.

In a bowl, mix together all of the ingredients until well-combined. Best to use your hands here, unfortunately. Roll up pieces of the mixture into balls about 1 inch across. (This made about 24 for me, YBMV.)

Heat some olive oil in a large frying pan, add the meatballs and fry for about 6-10 minutes (depending on their size), keeping them moving so they brown evenly.

We had this with mini pitta breads, the tzatziki, and some mushrooms sliced and fried in butter until golden brown (as there were some in the fridge). Yummy and surprisingly filling!
